Sweet Potato toast topped with Veggies & Salmon

Sweet potato toast topped with avocado, spinach, egg, tomato olive salsa, smoked salmon, red unions, sesame, furikake seasoning & nuts.

 

Perfect snack for when you get a friend or family visit at home also great for breakfast or even a starter. Because of the toppings it contains alot of healthy fats & protein.

The colors make it look inviting and yes its so easy to prepare!

I have used salmon and egg but of course you can make it how you want. for vegan and vega it is easy to replace the topping for something else!

 

Anyway did you know that a sweet potato, unlike a normal potato, is a vegetable !

They’re high in fiber and packed with alot of nutrients.

vitamin B6, which is good for your heart. It contains iron, magnesium, copper, selenium, zinc, A, B ,C vitamins and vitamin E but also enough other nutrients.

 

 

 

 

 

 

Some ideas for Sweet Potato Toast Toppings.

Tomato salsa with red onions olives, pine nuts and tabasco.

Mashed avocado with lime juice and red pepper flakes.

Guacamole ( used as a spread ) Spinach & Egg. 

Hummus with sliced cucumbers and Sesame.

Green arspergus, Avocado, Salmon, Onions and Egg.

Avocado, Spinach and Wasabi Furikake.

Ricotta with walnuts and honey.

Almond butter with sliced bananas and chia seeds.

Tomato hummus, roasted chickpeas with radish and cherry tomato.

 

Preparing of the potato.

Slice the ends of the sweet potato off, then cut it lengthwise into 1/4-inch thick slices.

Arrange the slices in a single layer on the baking sheet. 

You can bake them in the oven at 200 degrees or in a toaster.

Bake until the slices are tender and easily pierced with a fork, check the potatos between 15/20 minutes. ( Of course you don't want your sweet potato to be too soft, otherwise it will be difficult to eat with topping on it. )

 

Serve warm or cold with your favorite toast toppings.
